:: Ingredients for Rice Chowder
Basmati rice 1/3 cup (uncooked)
Green chilly 2-3 chopped fine
Onion 1 chopped
Garlic 1 clove minced
Carrot 1 chopped
Parsley 2 tbsn chopped
Lemon rind 1 tbsn chopped
Chicken Breast 1 cooked and chopped fine
Celery 1 cup Chopped
Chicken Broth 4 cups
Milk 1 Cup
Salt and pepper as per taste
:: How to make Rice Chowder
Heat Butter in a pan and add garlic and fry till golden
brown. Add onion and fry till
tender. Add Vegetables,parlsey,lemon rind and rice and
saute till mixed well.
Add broth and bring to boil. Reduce heat and cook covered
on low flame till rice is
cooked. (15-20 minutes)
Add the chicken and milk and mix well. Puree about 2 cups
of chowder and return
to pan. Heat through and adjust taste with salt and
pepper. Serve hot.
