:: Ingredients for Avial Variation
Vegetables 3-4 cups
Coconut grated 1 cup
Tamarind
Green chilly 2-3
Turmeric 1/2 tspn
Cumin seeds 1 tbsp
Salt - to paste
Small onions - 2
Coconut oil 1 tbsp
Curry leaves 1 sprig
:: How to make Avial Variation
Cut all the vegetables into 2-inch long pieces.
Cook the vegetables by adding little water turmeric and
salt.
Meanwhile grind coconut, cumin seeds and green chilly,
onions and tamarind to
get a coarse paste.
When vegetables are about ¾ th done, add coconut paste,
and cook on low flame
till all the water is absorbed.
Pour coconut oil on top and garnish with curry leave.
Serve hot with rice.
